Chef Peter Gilmore
Inspired by nature’s cuisine and a passionate gardener himself, Peter Gilmore is one of the first chefs in Australia to embrace heirloom varieties of vegetables by partnering with local farmers, fishermen and breeders. He continues to work in collaboration with small and artesian producers who cultivate exclusively for award-winning restaurants, Quay and Bennelong in Sydney, where he is the Executive Chef. His inspiration to cook developed at the age of 16 when he began an apprenticeship. After many years of hard work, Peter attained critical recognition as Head Chef at the former De Beers Restaurant at Whale Beach in Sydney and is a published author and has won numerous awards during his career.
